Chocolate avocado brownies

Hey everyone.  With it being just after the Christmas and New Year period I’m feeling pretty chubby after eating my body weight in Turkey sandwiches and Chocolate truffles.  However, I’m still loving all the carb heavy meals and cosy warm meals, so I wanted to share with you all one of my favourite healthier recipes for when you’re trying to be healthier but still in dire need of a chocolate fix.

Chocolate Avocado Brownies.

1 large Avocado

½ cup non-sweet apple sauce

½ cup maple syrup

1 tspn vanilla extract

3 large eggs

½ cup coconut flour

½ cup non-sweet cocoa powder

¼ tspn sea salt

1 tspn baking soda

  1. Preheat oven to 200 degrees
  2. Use a blender to mix the avocado, apple sauce, maple syrup and vanilla
  3.  Place these ingredients into a large bowl and whisk in eggs
  4. Add in your dry ingredients – coconut flour, cocoa powder, sea salt and baking soda.
  5. Stir together until everything is well combined.
  6. Use an 8 x 8 inch baking tray, and grease it well.  I like to use Coconut oil to add a slightly diffferent taste
  7. Add batter to pan, and cook in oven for 25mins.
  8. Allow to cool, roughly 20 minutes.
  9. Cut into brownies – I like to make this into 16 brownies.
  10. Eat, eat, eat.

Everytime I make these brownies they’re gone within 3 days, but it doesn’t matter because they taste so good, and aren’t too bad for you. Do you make any recipes with healthy substitutes?
